Chicken Pad Thai



 


If you like pad thai, you're going to flip for this dish. It takes about 25 minutes to prepare, and everything is made from scratch (except the sauce).

I like to cook Thai dishes with Thai Kitchen®, because they guarantee their gluten-free ingredients truly are gluten-free. They don't pay me to write that, so feel free to substitute, if you want.

Ingredients (makes 2 servings):
7 oz Thai Kitchen®; stir-fry rice noodles
(3) 6 oz boneless chicken breasts
1 egg (or 2 egg whites)
4 Tbsp olive oil
5 oz Thai Kitchen®; pad thai sauce
4 oz Reese water chestnuts, sliced
10 sugar peas (snow peas)
2 Tbsp cilantro, chopped
3 green onions, sliced
2 Tbsp peanuts, crushed or chopped
1 lime, sliced into wedges

Have fun while you cook it up:
Be sure to wash hands thoroughly between handling chicken, egg and other ingredients.

Boil 3 cups water. Remove from heat and add noodles. Let soak for 4 minutes or until soft.

Cut chicken breasts into long 1/2-inch slices. Rinse noodles with cold water and strain.

In a large pan or wok on medium heat, scramble egg with 1 TBSP olive oil. Don't allow egg to brown or burn. Remove egg.

In same pan, add chicken with 3 TBSP olive oil. Increase heat to medium-high, and stir occasionally, until all sides are slightly golden and chicken is cooked throughout.

Add noodles, pad thai sauce, water chestnuts and sugar peas. Return pan to medium heat and stir-fry with two spatulas or wooden spoons until sauce is spread evenly. If you like your pad thai spicy, add hot sauce now.

Remove from heat and serve topped with cilantro, followed by egg, then green onions. Garnish with chopped peanuts and two lime wedges.

Well...

So it's been well over two months since I've posted a new blog. Yes, I've been busy. Yes, I've been tired. Yes, I've been exhausted. Yes, I sometimes love being this way. I'm not sure why but I tend to stretch myself way too thin. It's o.k. I can rest when I retire.

As far as my health- I had to go back to eating gluten. I have to have another upper endoscopy done November 29. The key is to have as much damage to my gut as possible. Seems weird but it's true. The doctors want to check everything out again and double check that the culprit is only Celiac.So I've been eating every cereal, bread, and dessert I can lay my hands on. After all, I won't get to eat them again. Stomach upset has been pretty extreme but it's for the best, I guess.

Frustration In The Works

My frustration is building.
I'm imagining the frustration as a 7-8 story high building and the builders never go on break. It keeps growing taller.

I'm trying pretty hard to do this gluten free (GF) diet thing and unknowingly failing at it. I understand it is going to take some time to go completely GF but this is ridiculous. I want results now!

I know when I've gone off the path because I get horrible symptoms and just an overwhelming feeling of "blah." It's so hard not to open the cupboard and grab some graham crackers or wheat thins. Yes, I'm a whiny brat. I feel like Veruca Salt from Charlie And The Chocolate Factory. " I want it now!!"

This is actually quite embarrassing. I should stop writing now.

Mismatched Aprons

So I recently got my sewing machine out again. I originally put it away because it kept binding up the fabric and not working correctly. I'm sure the machine needs a cleaning or tune-up or something. I'm not sure where to take it and money could be spent elsewhere. For now, it works.

I have so many sewing projects that I've started and not finished. For instance, I started making curtains for my mom. I still have all of the material and measurements safely together. Every time I try to work on them, the machine quits on me. Now that my machine is working ok, I think I remember packing that material away for when we move. Sorry mom- I promise I'll finish them sooner than later. I have so many projects like this that just need to be finished.

I've seen a lot of really neat patterns of aprons on the web. I've decided to give them a whirl. They're all mismatched patterns but colors that go together. I've started one so far and it's looking pretty good. I'm matching a dark pink flower pattern with a black and white repeating pattern.

All of the scrap remnants from this project will be used for a quilt one day in the future. I've never made a quilt but it couldn't be that hard, right?

Here's what I've got so far. I'll post another photo when it's complete.

This is officially my first post to my new blog. I was diagnosed Celiac on July 21, 2010. I was also told that I'm lactose intolerant, and can't have many fruits and vegetables that I love. One thing that I don't understand is that I'm also not supposed to have yeast. Who's sensitive to yeast!? Apparently I am and also to many other foods.

Since that day, I've been floating through life thinking that I have plenty of time to heal my stomach and insides. I've been trying really hard to stay away from the gluten but still occasionally consuming other foods I'm sensitive to. Now, I've had these horrible symptoms of Celiac for years. I need to wake up, stop mourning food, and get healthy!

At my last appointment with the holistic doctor, they told me that I need to start taking all of these vitamins ( 7 different ones to be exact ) and I don't like it. I've actually only bought one of the seven because I hate taking pills. I hate medicine. I feel most of us are equipped to heal our bodies ourselves. Now that I know my diagnosis I think I'm going to try it my way. Every website I read about Celiac doesn't talk about taking a bunch of vitamins. It just expresses the need for diet change.

So today I'm going to try my hardest to not consume ANYTHING bad for me. I'm also going to enjoy the sunshine!
